This was probably one of my favorite recipes I’ve ever made. The rest of the meal was amazing as well but, highly recommend whipping this delicious meal up!! Jeff purchased some fresh Salmon and topped the filets with Lemon, Dill and Onions then BBQ on a Cedar Plank. We then grilled some Asparagus with a little EVOO and S&P served with this Edamame Dill Salad and I don’t think I’ve eaten a meal so fast it was that good!
- ½ cup edamame shelled
- ¼ cup yellow bell pepper, diced
- ¼ cup onion, sliced or chopped
- 1 tsp fresh dill, minced
- 1 tsp extra-virgin olive oil
- Combine ingredients in a bowl and toss thoroughly
- Serve Chilled
