It isn’t crazy to say that Holiday meals usually consist of “Carb-Loading” . We have cookies, cakes, pies, potatoes, casseroles, etc. There are so many simple ways to lighten up your feasts so that you don’t get that hibernating feeling. Caulflower is a very fibrous vegetable- meaning it will keep you feeling full for a longer period of time. This is a very versatile dish where you can make it as the same texture as you would mashed potatoes (creamier, chunky). Try it out and let me know what you think!

Garlic Mashed Cauliflower

Serves: 4 servings
  • 1 Medium head cauliflower
  • 1 TB softened cream cheese
  • ¼ cup grate parmesan
  • ½ tsp minced garlic
  • ⅛ tsp chicken base or bullion (can substitute ½ tsp salt)
  • ½ tsp chopped fresh or dried chives, for garnish
  1. Boil a stockpot of water over high heat
  2. Clean and cut cauliflower into small pieces. Cook in boiling water for about 6 minutes, or fork tender. Drain well; pat dry with paper towels
  3. Transfer to bowl, add parmesan, cream cheese, garlic, chicken base and pepper with an Immersion Blender.
  4. Garnish with chives and serve hot
  5. Note: Try roasting the garlic and add fresh rosemary for a whole new taste
